- 4 medium zucchini squash
- 4 medium yellow Crookneck squash
- 2 Tbs butter
- 1 clove fresh garlic, minced (optional)
- Salt and pepper to taste
- 1 Tbs fresh Italian parsley, minced
- Slice the squash in rounds 3/8” thick and steam to desired doneness (can also be stir fried).
- Melt butter and lightly saute garlic.
- Arrange on serving dish alternating yellow and green rounds, drizzle with melted butter and sprinkle minced parsley on top. Serve hot.
