Healthy Vegetarian Chili

Makes 10 servings.

Ingredients

- 28 oz can stewed tomatoes
- 1 can black refried beans
- 1 cup dry red lentils
- 1 cup dry brown rice
- 1/2 cup spicy pineapple salsa
- 3/4 cup minced sundried tomatoes
- 1 tsp salt
- 6 figs chopped fine
-12 baby carrots sliced
- 2 cups water

Preparation

- Mix ingredients in a large pot.
- Bring to a boil.  Simmer for 30 minutes.  Refrigerate overnight.
- Reheat on medium for 30 minutes prior to serving.
